New Year’s Food ‘n’ Buys ‘n’ Eats!

Food post! Just too much (non-New Years related) pictures to put on the previous post. 😉

Recent buys:

Ran out of Whole Wheat Flours because I was making pancakes like crazy. 🙂 And though I decided to cut out Kombucha, I wanted something fizzy. Thought it was better than having a soda. 🙂 (but I had some of my brother’s anyways)

Honest Tea’s Apple Jasmine Kombucha: This had a fair taste of apples (and the smell too). It tasted like it was watered down A LOT. (compared to Synergy or Vibranz kombucha) But if you want a light “fizz”, it’s okay. 🙂

And I wanted to make Averie’s Chex Mix, so I bought this Kashi’s Island Vanilla a while ago. As a cereal, it’s not sweet. Too hard, and it gets soft too easy. I like “crunchy“, but this wasn’t “crunchy” at all. I like my Hemp Granola Cereal waaaaaaaaay better. 😉

This next one was buy one get one free special (and it was only $2.59 each), so I bought it. Three Sisters Instant Oatmeal.

The package that the oatmeal was in is very convenient and eco-friendly. Open the package, and fill it up to the line with water; no cups needed! Very convenient.

But the oatmeal part of this: EW. Oatmeal is the most bland, disgusting food I’ve ever had. It’s mushy and tasteless; it’s lacking “crunchiness” so much! Yes that’s how oatmeal is supposed to be, but I hate it. XP I will eat it up (or maybe use it in a recipe?) though; don’t like wasting food. 🙂

Tried adding it in Whole Soy & Co’s Vanilla yogurt, which made it a little flavorful.

Also bought this at Whole Foods, and these are yummers!!

A little bit on the dry side, but not going to complain. It has less than 10 ingredients, and it’s like Chips Ahoy! but vegan!!! I’ve wanted cookies like that ever since going vegan (in a package with about 20-25 cookies each), and it costs technically the same! ($3.69) I’m willing to buy it again, but that’s if I’m craving cookies on the dry side. (I like TJ’s cookies better; super-moist!!)

Odwalla‘s Choco-Walla Bar!! I like their Superfruit juice, too! We’re good friends. 😉

I bought a different Kombucha for New Year’s Eve.

Kombucha Botanica Hibiscus. This one tasted good! (looks like beer lol) Not too watered down like the above one, very fizzy, and I was able to taste the hibiscus! If you’re going for a stronger, flowery one, then this one’s better. 🙂

Recipe! Eggless Egg Salad!!

From peta2‘s 2-week vegan recipes. The recipe makes it into a sandwich. I didn’t. 🙂

Eggless Egg Salad:

Ingredients:

  • 1 package of extra firm tofu (drained) – it better be firm because if it’s soft, it does NOT seem like eggs!!!
  • 1/2 cup of vegan mayo
  • 1 1/2 tbsp of dejon mustard
  • 1/4 tsp turmeric (for yellow color)
  • 2 – 3 stalks of green onion (chopped – optional) <- I didn’t add any
  • 1/4 cup relish
  • salt and pepper to taste

Steps:

  1. Mash tofu.
  2. Add in all other ingredients.
  3. Eat!

You can put it into bread of course! Then it will yield 4 servings.

I doubled the recipe because I added an extra package of SOFT tofu (that’s all I had), then it tasted plain. (I still have some left) The sourness of the relish makes it taste really good, and I made this into a sandwich as well, and it tasted just like real egg salad sandwich!! If you like egg salad, it’s worth a shot to give it a try! 😉 I think this will be a staple at my house!

They also have a Tuna recipe, and I’m looking forward to making this too! (but first, I need to use up my relish…Relish tastes really good!) Maybe I’ll have an egg salad sandwich for lunch everyday in college! (sandwich is convenient, I don’t have to pay a high price for my lunch at the dining hall, and I won’t have to go back up to my room every time for lunch!) Hm, maybe! 😀

Lesson learned: buy relish at TJ’s, because they are WAAAAAAAAAAAAAY cheaper than Whole Foods ($4.99 vs $1.99; both organic)!!! Both preservative free. 🙂

Recipes!

I’ve been enjoying this for the last couple of days, because it’s just like Nutella, but vegan, and it’s like Justin’s nut butter, but better, because it’s nut-free!! 😀

Easy Chocolate Spread

Ingredients:

  • 1/2 bag of chocolate chips
  • 3-5 tbsp of coconut butter

Steps:

  1. Scoop coconut butter into microwave-safe bowl and melt it in the microwave (time depends on micro – I did it for a minute and it started to burn)
  2. Dump CC into melted coconut butter and microwave it for about 40 seconds.
  3. There may be CC left, but don’t worry. Stir the mixture, keeping in mind that you’re trying to melt the CC. It DOES melt, but if it doesn’t, feel free to put it in the microwave and micro it for 10 or so seconds.
  4. Stir until CC chunks are gone, and that’s it!
  5. (opt) Put it in fridge to make it a little bit hard and more like a “spread” (because it’s really liquidy right after it’s done)

Very convenient, too! I put this in a regular container and took it with me, bought bread (we were out), and spread it in the car! No wasting container (like those squeezable Justin’s nut butter), and because it’s made of coconut butter, it’s easy to wash off! (compared to pure ONLY chocolate melted. Those are SUPER-hard to wash off!!)

I would eat this straight, but why would I do that? I’d rather just use it as a spread. 🙂 And this saves me from buying Cocoa bliss, because you can make chocolate spread with coconut butter, but you can’t make coconut butter with cocoa bliss! 🙂 (unless you can take out the “cocoa” part out of the “cocoa bliss”…Ha ha) 😀

And today, I wanted SOMETHING. Don’t know what, but I wanted SOMETHING. So I figured, lets make something!

Made Averie’s Raw Vegan Donut Holes, but the Flax Seeds weren’t sticking!!! (maybe because I didn’t use a FP to FP the seeds! :D) So then I thought: “What can I put in that would still be healthy and make this stick?”

BF: “…Agave?”

“Oooooooooooh, right!!” The wonderful sweetness of Agav! (like the “Wonderful Wizard of Oz”. My brother likes singing (and doing the cute dance – lol) at random times, and it makes me laugh every time! :D) So we squirted some (1 tbsp?), and FPed it. Got better, but still not sticky enough.

The light bulb went on: “Butter? No. Coconut Chocolate Spread!!!!!!”

So I put the left over from today’s lunch (about 3-4 tbsp) in the FP with the Flaxseed mixture. (note: melt it before using, because it hardens pretty good)

“FP, GO!!” Then I let the FP run for a minute or so, and voila! It was PER-fect! Started rolling into balls (Michael, don’t wash your hand with dish soap next time – lol), and bam!! Cocoa powder-free (my body doesn’t work with it), chocolate doughnut holes!!

This was good, but maybe I should buy the finely-grounded flax seed instead, because the pieces are still a little too big! 🙂 Lesson learned!

Finally Food and Where I’m Going

Hi everyone! How are you today? 😉

Ever since losing my camera, I couldn’t keep a record of the yummy eats I’ve been having. (I have A LOT) Like Cookies from Alternative Baking Company,

Justin’s Chocolate Hazelnut Butter,

(This is just like Nutella!!!! I’m glad there’s a vegan version of it!) 🙂 With little bits of hazelnut in it, it’s pretty good for a chocolate and/or hazelnut lovers!!

Because my mom’s been worrying about me losing my hair (“because you’re not getting enough nutrients”), I bought Manitoba Harvest’s Dark Chocolate Hemp Protein and VegLife‘s Vegan One Multiple.

The powder is very chocolatey, but it’s a little hard to dissolve it in soymilk. (but does great in water.) So for a smoothie, I recommened using water instead of dairy-free milk.

Ha ha, the powder was on sale for $12, but we went to Trader Joes and found the almost EXACT same product (with super-close ingredients and nutritional stats) for $7. Next time, that’s where I’m getting my protein. 😉

The Multiple seems to be working pretty good. It’s iron-free, and now I don’t have to take 3 different suppliements! 😀

I’ve never tried Hemp Milk before, so I gave Living Harvest’s Tempt Vanilla Hemp Milk a try with Nature’s Path Pumpin Flax Plus Granola!!! 😀 (Hemp on hemp. Lots of hemp, I know) 😉

 +  = VERY HEMP-Y!!!

The Tempt Hemp Milk was very runny/watery compared to soy milk; it reminded me of Rice Dream’s Rice Milk. The pumkin granola has a little “pumpkin flavor” to it; it’s great for this season, right? (Gosh, everyone likes pumpkins in the fall.) 🙂 Me? I prefer the original granola and summer 🙂

Because I bought a little too many boxes of the Hemp Granola, I decided to make Chocolate Turtles out of it! I used Kris’ recipe, but I tweeked it a little bit to meet my needs. 😉

Miho’s Hemp Seed Chocolate Clusters:

  • 1/2 cup of Hemp Granola
  • 1/2 cup Sunflower butter (I had it for the first time and it reminded me of Kinako! It’s soybean powder with added sugar to give it sweetness; usually put on rice cakes/mochi) 🙂
  • 1/4 cup Agave Nectar (or Maple Syrup)
  • 1/2 tsp Vanilla Extract
  • 1/4 – 1/2 tsp Sea Salt
  • 1/2 bar Dark Chocolate

Steps:

  1. Put Nut Butter, Agave, Vanilla, and Sea Salt into a pan and heat it over medium high.
  2. When the texture changes into a chunky/caremel-like blob, remove pan from heat, put the granola in and stir.
  3. Using a spoon, scoop a blob and place it on a cookie sheet (depends on how big the blob is; I made about 24) and put it in the freezer for 10- 15 minutes.
  4. Melt the chocolate bar, take #3 out of the freezer, pour the melted chocolate over it, and put it back in the freezer (or fridge) until chocolate hardens. (I was too impatient the first time, so I put the semi-melted chocolate bar into the mixture. Then the cluster turned brown!) 😀
  5. When ready, eat up!

I didn’t have enough chocolate because I used the leftover from what I ate, so some of them are choco-less. (but still good and nutty if you like that! :D) This was really good, and next time, maybe I’ll use Justin’s Chocolate Hazelnut Butter and/or definitely have more chocolate on top! 😀

Yesterday, I felt like going to the near-by Co-op (though I went the day before. I never get tired of going there. It’s like Whole Foods; less expensive!), and I totally scored on Larabars!!! $0.99 each, and jocalat bars for $1.19 each!!

Somebody seems to have filled up their stash a little too much. 😉 13 A good amount of larabars isn’t a bad thing, right? 😉 (and it was only $14 total!) (I like Luna bars more persay, but it’s pricy there. I’d rather get it at TJ’s then)

School-wise, it’s been awesome! I’ve been going to the REC center these days, and I’m enjoying my exercises and sweating like crazy with my face all apple-red from running/jogging a mile!! (a mile in 10 minutes for a non-exerciser/runner is pretty good, I think) I’ve been enjoying testing different workouts and equipments. 🙂

I’m getting the hang of college. I’ve been doing fairly well on tests, and my self-confident is slowly building up.

Speaking of that, I’ve been showing more graditude than I do now. I’m reading a great Japanese book called The Way of Thanks.

It explains the importance of saying “thank you” and showing gratitude. In my opinion, this book seems a little pushy about how you should say “thank you” 1000 or even 3000 times. But the point-being is that it’s important to appriciate what you have (from eyes, nose, hands, arms to a house, car, food, etc.). Kris speaks about gratitude in her post as well.

I can see/feel myself growing as a person, and I think I’m going to come out as a better person than I am right now in 4 years. (4 years as in finishing college) I’m just thankful that I’m able to live right now. 🙂
